BBQ Chicken pizza + Bacon wrapped jalapeno popper crust

Sweet & Spicy BBQ Chick’n pizza with bacon wrapped jalapeno popper crust

ngredients:

1 can of prepared pillsburry pizza crust

1/2 can of pillsburry pizza crust, for crust

10 or more jalapenos (deseeded & cut from top0

10 strips or more bakon ( I used lightlife tempeh strips)

1.5 bag (12 oz) of shredded cheeze (I used Daiya mozzarella)

1 Tbsp soy or almond milk

1 2/3 cup of BBQ Sauce (I used store bought sweet & spicy)

2/3 cups of chick’n strips (I used Beyond meat), cut into 1″ strips

1/2 small red onion, thinly sliced

Fresh cilantro, for topping

Toothpicks, to hold bakon in place

1 large zip lock bag (for pastry bag)

Scissor

Instructions:

Marinade:

In a bowl, mix together cut chick’n strips & 2/3 cups of BBQ sauce

Marinate for at least 20 minutes

Set aside

Cheeze Filling:

Place 1 bag (8oz) of cheeze inside blender or juicer

Pour in 1 Tbsp of choice of milk

Blend until consistency is similar to melted cheeze.

Add more milk if dry or more cheeze if too thin

Place inside a large zip lock bag and gather all in one side

Release all the air inside & tightly secure by sealing entire bag

Using a scissor, cut a direct strip on either edge to create a pastry bag

Set aside

Pizza:

Lightly mist a 12″ pizza pan with olive oil spray

Place prepared dough onto pan, making sure to cover entire pan

Layer first with 1 cup BBQ sauce and spread evenly

Place the chick’n strips next, making sure to spread the excess sauce evenly as well

Layer the remaining cheeze (not blended) next

Finally, place chopped red onions next & set aside

Crust:

Rinse deseeded jalapenos in running water, removing any unwanted seeds

Fill each jalapeno with prepared cheeze using the custom pastry bag

Cut 2-3 inches of dough & wrap around each jalapeno, making sure it fits around tightly

Next, wrap 1 strip of bakon on top of the dough per each jalapeno

(cut any excess strips off)

Use a toothpick to securely hold each popper crust together

Assemble each popper crust around entire pizza

(Don’t worry if you have any gaps as the dough will expand once baked)

Let any any excess cheeze run off to blend with pizza

Bake at 400 degrees for about 20 minutes

Remove pan from oven & place additional BBQ sauce if needed.

Top off with cilantro and bake for an additional 5 minutes

Cut each pizza into slices, using 1 popper per slice

Remove tooth picks, serve and enjoy!
