No bake peanut bar

No bake peanut butter chocolate bar with granola bits



1 box of Nabisco graham crackers .

2/3 cup vegan butter (melted)

1 tsp sugar or sweetener

1 tsp cinnamon

  • 2/3 cup crunchy peanut butter


12 oz of bitter-sweet baking chocolate (55%-70% cocoa, approximately 3 bars)

1/2 creamy peanut butter, divided

1 tbsp maple syrup

1/2 tsp vanilla extract

1/4 cup cacao granola bits

1/2 cup coconut creamer



Using a 9×9 baking dish, spray mist the pan with olive oil and place parchment paper on top. (Be sure to leave a few inches of parchment on the sides for easier handle)
In small increments, put the graham crackers inside a food processor & pulse until it forms into crumbs
Add the melted butter along with the peanutbutter once all the graham crackers have been pulsed
Place the mixture in a large bowl and work with your hands until a smooth consistency is formed
Transfer mixture onto the baking pan & spread evenly, making sure to cover all the sides and edges. You can use your hands along with a spoon for this.

Place the chocolate and peanut butter into two separate pots in high heat for 5 minutes until a creamy consistency is formed for both mixtures (Be sure to constantly whisk)Add the vanilla extract, maple syrup, coconut milk & meltedpeanut butter in the chocolate mixtureWait for a few minutes & turn off both pots to let cool offPour the pot of chocolate mixture onto thebaking pan & spread evenly on top of the graham crackers. You can use a rubber spatula to help spread the mixture.With a spoon, scoop out the peanut butter mixture in different areas of the baking pan on top of the chocolate mixtureOnce all the peanut butter has been poured, use the edge of a knife to create different swirls all around the pan.Use a toothpick to create smaller swirls to create a marble effect

Place baking pan inside the refrigerator and let it cool for at least 1 hour minimum. Once cooled, remove pan from refrigerator and let it sit for at least 10-20 minutes. Pull the parchment paper up from the sides and transfer to a cutting board. Carefully cut 4 straight lines both horizontally and cut remaining bars into 3 or 4 more squares. Transfer to a plate and top off with cacao granola bits
